La Petite Maison's Drink – How to Make It

WHere is a home-style version of a drink from a new menu. It's a batch premix that is bursting with the flavours of a festive period, making it excellent for a festive gathering. Reserve the remaining syrup for breakfast cocktails, desserts, or for another batch of this cocktail.

The Bikini Cocktail

Yields 10 guests

For the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Premix (makes 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

For the Citrus Syrup: Put all the components in a pot, bring to a light boil, agitating until the sugar dissolves. After that, turn off the burner allowing it to cool down entirely. Decant into an sterilised bottle, seal and refrigerate it in the refrigerator, where it will keep for up to four weeks.

For the Premix: Combine the specified spirits and syrup into one sizeable container, allow it to infuse for 60 minutes, then filter it , ideally through muslin, to ensure it's perfectly clear.

When ready to serve: Measure 85ml from the batch mix into your mixing glass containing ice, gently stirring gently for about 60 seconds until cold. Pour into a cold coupe glass or a similar vessel, garnish with some cranberries and complete it using a brief mist of mandarin oil above the glass.
